Easy Baked Eggs
Serves 1 special mum
INGREDIENTS
2 Frenz eggs
1 pack of J.C David Beurre Blanc Sauce
1 tbsp salted butter
1/2 tsp chives, finely chopped
Salt and pepper, to taste
1 slice of sourdough bread
METHOD
- Pre-heat the oven 180°C.
- Butter a shallow oven-proof dish.
- Crack one of the eggs into a bowl. Carefully transfer it to the shallow dish to prevent breaking the yolk. Repeat with the other egg.
- Season the eggs with a dash of salt and pepper.
- Put a pat of butter on the eggs and pop the dish into the oven. Cook for 5 minutes until the whites are set and yolks runny, or done just the way mum likes them!
- Toast the sourdough bread till nice and crisp, and cut into fingers.
- Pour the beurre blanc sauce into a saucepan and warm for 2 to 5 minutes over low heat. Alternatively, immerse the sachet into a pot of boiling water and simmer for 10 minutes to heat it up. Spoon the sauce over the cooked eggs and garnish with finely chopped chives.
- Serve with toasted sourdough.
