​Easy Baked Eggs


Serves 1 special mum


INGREDIENTS

2 Frenz eggs

1 pack of J.C David Beurre Blanc Sauce

1 tbsp salted butter

1/2 tsp chives, finely chopped

Salt and pepper, to taste

1 slice of sourdough bread


METHOD

  1. Pre-heat the oven 180°C.
  2. Butter a shallow oven-proof dish.
  3. Crack one of the eggs into a bowl. Carefully transfer it to the shallow dish to prevent breaking the yolk. Repeat with the other egg.
  4. Season the eggs with a dash of salt and pepper.
  5. Put a pat of butter on the eggs and pop the dish into the oven. Cook for 5 minutes until the whites are set and yolks runny, or done just the way mum likes them!
  6. Toast the sourdough bread till nice and crisp, and cut into fingers.
  7. Pour the beurre blanc sauce into a saucepan and warm for 2 to 5 minutes over low heat. Alternatively, immerse the sachet into a pot of boiling water and simmer for 10 minutes to heat it up. Spoon the sauce over the cooked eggs and garnish with finely chopped chives.
  8. Serve with toasted sourdough.
