Potted Prawns

¼ tsp sea salt
¼ tsp white pepper
A pinch of cayenne pepper, or to taste

- Mix the cooked prawns in the seasoned clarified butter.
- Spoon into small bowls or ramekins, and garnish with a sprig of dill. Leave to chill in the fridge overnight.
