Lemonade

Serves 8

Ingredients

3 to 4 Amalfi lemons

6 cups water

3/4 cup fine granulated sugar

To Serve

Ice

Reserve a few lemon slices as garnish

Method

  • Grate the zest of all the lemons. Take care to avoid the white pith.
  • Juice the lemons (it should yield about 1 1/3 cups of juice) and set aside.
  • Place the zest in a small saucepan with 1 cup of water and simmer over low heat for 20 minutes to extract its lemony colour and flavour. Strain and set aside to cool.
  • In another saucepan, add 2 cups of water and sugar, and heat till the sugar has dissolved completely to form a simple syrup. Let cool.
  • In a large jug, combine the lemon extract, lemon juice and syrup. Dilute with the remaining 3 cups of water and chill in the fridge.
  • Serve over ice and garnish with lemon slices.
