John Stone Porterhouse Steak
Serves 3
Ingredients
1 John Stone porterhouse steak
Salt and pepper, to taste
Grapeseed oil or any neutral oil
30g butter
ΒΌ bunch thyme
3 cloves of garlic, unpeeled
Method
- Remove porterhouse steak from vacuum bag and place on tray for 40 minutes, till it comes up to room temperature.
- Place cast iron pan on stove over medium heat, until pan is shimmering and smoking a little.
- Season steak with salt and pepper.
- Brush with grapeseed oil or any other neutral oil.
- Place steak in pan and sear for 2 to 3 minutes on each side.
- Remove from pan. Place on rack and let it rest for 8 minutes. While waiting, go ahead and make your salad of choice.
- Just before serving, place the steak back into hot cast iron pan and foam with butter, herbs and garlic. Remove from pan and slice the steak.
To serve
Plate with salad of choice and enjoy with Tracklements Strong English Mustard on the side.
