Paspaley Pearl Crudo

INGREDIENTS

Paspaley Pearl Crudo

50g paspaley pearl meat

20ml jalapeno citrus dressing

Jalapeno citrus dressing

1 jalapeno, sliced

400ml grapefruit juice

10g garlic

20g sugar

20g Colatura di Alici


Garnish

20g nectarine, diced

5g horseradish, grated

2g mint, stems removed

2g puffed rice


METHOD

  1. Add all the ingredients for the jalapeno citrus dressing into a blender. Blend well, strain and set aside.
  2. Blanch pearl meat in boiling water for 5 seconds. Remove the pearl meat from boiling water and plunge into a bowl of ice water immediately.
  3. Slice the pearl meat and arrange on the shell.
  4. Dress with jalapeno citrus dressing.
  5. Garnish with nectarine, horseradish, mint and puffed rice before serving.
