Char Grilled Steak with Mushroom Sauce
Ingredients
- 8 pieces AACo rib fillet steak or other steak of your choice
- 20g butter
- ½ cup chicken stock
- 1 ¼ cups cream
- 2 tbsps fresh chives, finely chopped
- 2 cloves garlic, crushed
- 500g mushrooms of your choice, sliced
- 1 tbsp lemon rind, grated
Servings: 8
Method
- Heat a saucepan to high heat. Season steaks with salt and pepper and brush lightly with olive oil. Once the pan is hot, cook the steaks to your liking. Make sure to turn the steaks only once while cooking to get the most tender and juicy steaks possible.
- Set the steaks aside in a warm place to rest while you make the mushroom sauce.
- Using the steak pan, melt butter and add garlic and mushroom, cooking until mushrooms are soft. Stir in the stock, cream and rind and simmer uncovered for about 15 minutes or until the sauce thickens slightly. Stir in chives and serve.
