Tiger Salad

Serves 4

INGREDIENTS

Salad
3 Japanese cucumbers with skin on, julienned

1 bunch of coriander, picked with stems finely chopped

1 bunch of Chinese parsley or celery, leaves picked

2 spring onions, thinly sliced on the bias

1 to 2 green chillies, thinly sliced on the bias

4 to 5 mangetout, sliced

1 tbsp shiso cress

Dressing

1 tbsp rice vinegar

1 tbsp soya sauce

2 tbsp sesame oil

1 to 2 tsp chilli oil

ΒΌ tsp of sugar, to taste

To Serve

2 tbsps best quality dried shrimp, rehydrated in warm water

METHOD

1.In a small bowl, add all the ingredients for the dressing and mix well. Set aside

2.Place all the salad ingredients into a large bowl. Just before serving, add the salad dressing and toss well. Sprinkle dried shrimp on top and enjoy immediately.
