Potted Prawns

Serves 2 to 3


INGREDIENTS

250g prawns, cooked, peeled and cut to fit your small bowls or ramekins

200g unsalted butter

2 to 3 blades of mace, finely chopped

¼ tsp sea salt

¼ tsp white pepper

A pinch of cayenne pepper, or to taste

A small sprig of dill

METHOD

  1. In a small saucepan, melt the butter over low heat.
  2. Gently skim off the foamy milk solids that float to the surface. You should be left with a clear golden liquid.
  3. Let the butter cool slightly. Season with sea salt, white pepper, mace and a pinch of cayenne pepper.
  4. Mix the cooked prawns in the seasoned clarified butter.
  5. Spoon into small bowls or ramekins, and garnish with a sprig of dill. Leave to chill in the fridge overnight.
Serve with crispy toast.
