Almond Grape Gazpacho

Serves 3 – 4

INGREDIENTS

1 cup blanched almonds

3 cups chilled boiled water

2 slices fresh crustless rustic bread, torn into pieces

2 garlic cloves

1tsp salt

¼tsp white pepper

A splash of sherry vinegar, more to taste

2tbsp extra virgin olive oil and more to drizzle before serving

Garnish

Green seedless grapes, peeled and cut into halves

METHOD

1.Soak the almonds in chilled water overnight in the fridge.

2.In a blender, combine the almonds in chilled water, torn bread, garlic, olive oil, salt, white pepper and sherry vinegar. Blend until very smooth before straining.

3.Place in the fridge and chill for at least 2 hours before serving.

4.Pour into bowls, and garnish with grapes and a generous drizzle of olive oil before serving.
